Ingredients
- 1.5 lbs boneless, skinless chicken breast – cut into 1-inch bite-sized cubes
- 1/4 cup fresh lemon juice – freshly squeezed for the brightest flavor
- 2 tablespoons olive oil – extra virgin preferred
- 2 cloves garlic – minced finely
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika – smoked if desired
- 1/2 teaspoon salt – adjust to taste
- 1/4 teaspoon black pepper – freshly ground
- Optional: 1 tablespoon fresh parsley – chopped, for garnish

Instructions
- In a medium bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, paprika, salt, and black pepper.
- Add chicken cubes to the marinade and toss to coat evenly. Let marinate for at least 15 minutes (or up to 2 hours for more flavor).
- Preheat air fryer to 400°F (200°C).
- Arrange marinated chicken bites in a single layer in the air fryer basket. Cook for 8–10 minutes, shaking halfway through, until the internal temperature reaches 165°F (74°C) and the chicken is golden and slightly crisp.
- Transfer to a plate, garnish with fresh parsley, and serve with extra lemon wedges for a burst of fresh flavor.
