Ingredients
- 2 cups cottage cheese
- 3 large eggs
- 1 large apple, peeled and finely diced
- 1/2 cup rolled oats or almond flour
- 1/4 cup maple syrup or honey
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease a small baking dish.
- In a mixing bowl, whisk together cottage cheese and eggs until smooth.
- Add diced apple, oats or almond flour, maple syrup, cinnamon, vanilla, and baking powder.
- Mix until fully combined.
- Pour the mixture into the baking dish and spread evenly.
- Bake for 35–40 minutes or until the top is golden and the center is set.
- Let cool slightly, slice, and enjoy warm.

- Use almond flour for a low-carb version.
- Any apple variety works—Honeycrisp, Fuji, or Gala are best.
