Description

These Apple Cinnamon Oatmeal Cookies are soft, chewy, and packed with warm cinnamon flavor, sweet apples, and hearty oats. Perfect for breakfast or a cozy snack with a cup of tea or coffee.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups rolled oats
  • 1 cup diced apples (about 12 apples)
  • ½ cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Fold in oats, diced apples, and nuts (if using).
  7. Drop dough by rounded tablespoons onto prepared baking sheet, spacing 2 inches apart.
  8. Bake for 12–15 minutes, or until edges are golden but centers are still soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, sprinkle a little cinnamon sugar on top before baking.
  • Use tart apples like Granny Smith for a nice balance of sweetness.
