These Apple Cinnamon Oatmeal Cookies are soft, chewy, and packed with warm cinnamon flavor, sweet apples, and hearty oats. Perfect for breakfast or a cozy snack with a cup of tea or coffee.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 3 cups rolled oats
- 1 cup diced apples (about 1–2 apples)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually mix dry ingredients into wet ingredients until combined.
- Fold in oats, diced apples, and nuts (if using).
- Drop dough by rounded tablespoons onto prepared baking sheet, spacing 2 inches apart.
- Bake for 12–15 minutes, or until edges are golden but centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, sprinkle a little cinnamon sugar on top before baking.
- Use tart apples like Granny Smith for a nice balance of sweetness.
- Store in an airtight container at room temperature for up to 5 days.
