Cake Ingredients:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder

- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- 2 medium apples, peeled, cored, and chopped (Granny Smith recommended)
Crumb Topping Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
Cinnamon Apple Drizzle Ingredients:
- 1 tablespoon unsalted butter
- ½ cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 2 tablespoons milk
- A pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch square pan.
- Make the Cake: In a bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. In another bowl, cream butter and sugar until fluffy. Beat in eggs and vanilla. Mix in sour cream, then gradually add dry ingredients. Fold in apples and spread batter into prepared pan.
- Prepare Crumb Topping: Combine flour, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in brown and granulated sugar. Sprinkle evenly over cake batter.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean. Cool slightly.
- Make the Drizzle: In a small saucepan, melt butter. Stir in brown sugar, cinnamon, milk, and a pinch of salt. Simmer for 1–2 minutes until slightly thickened. Drizzle over cooled cake before serving.
Notes
- Granny Smith apples give a tart balance, but Honeycrisp or Fuji also work well.
- For extra crunch, add ¼ cup chopped pecans or walnuts to the crumb topping.
- Best served warm, but keeps well covered at room temperature for up to 3 days.
