Description
This Baked Balsamic Chicken is juicy, tender, and bursting with sweet and tangy flavor. Topped with fresh mozzarella, juicy tomatoes, and basil, itโs an easy yet elegant dinner perfect for weeknights or entertaining.
Ingredients
- Sauce
- โ cup balsamic vinegar
- 2 Tbsp. honey
- 2 Tbsp. oil (avocado or olive oil)
- 2 garlic cloves, minced
- 1 tsp. Italian seasoning
- 1 Tbsp. Dijon mustard
- Tomato Mozzarella
- 8 oz. grape tomatoes, halved
- 8 oz. fresh mozzarella balls (ciliegine or pearls)
- 2 Tbsp. finely chopped fresh basil
- Chicken
- 2 lb. boneless, skinless chicken breasts, pounded to even thickness
- 2 Tbsp. avocado oil or other high-heat oil
- Kosher salt and fresh black pepper
Instructions
- Preheat oven to 400ยฐF (200ยฐC). Lightly grease a baking dish.
- In a small bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard.
- Season chicken breasts on both sides with kosher salt and black pepper.
- Heat avocado oil in a large skillet over medium-high heat. Sear chicken for 2โ3 minutes per side until golden (it will finish cooking in the oven).
- Transfer chicken to the baking dish and pour balsamic sauce evenly over the top.
- Bake for 18โ22 minutes, or until internal temperature reaches 165ยฐF (74ยฐC).
- In a bowl, toss tomatoes, mozzarella balls, and chopped basil together.
- Remove chicken from oven and top with tomato mozzarella mixture. Let rest 5 minutes before serving.
Notes
- For extra richness, broil for 1โ2 minutes to slightly melt the mozzarella.
- Serve with rice, pasta, or roasted vegetables.
- Store leftovers in an airtight container for up to 3 days.
