Description

This Baked Feta Eggs Recipe is a savory, Mediterranean-inspired breakfast or brunch dish. Roasted cherry tomatoes, bell peppers, and onions are combined with creamy feta and seasoned with herbs. Eggs are baked on top for a rich, flavorful meal that’s easy to prepare and perfect for sharing.


Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: chopped fresh basil or chives for topping


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, red bell pepper, red onion, minced garlic, olive oil, oregano, salt, thyme, black pepper, and red pepper flakes. Toss to coat evenly.
  3. Place feta cheese in the center of the dish and gently nestle it among the vegetables.
  4. Bake for 15 minutes until vegetables are tender and feta is slightly softened.
  5. Remove from oven, add chopped spinach, and make four small wells in the mixture. Crack one egg into each well.
  6. Return to oven and bake for 10-12 minutes, or until eggs are set to your preference.
  7. Garnish with fresh basil or chives if desired. Serve warm.
