Ingredients
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Optional: chopped fresh basil or chives for topping
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, red bell pepper, red onion, minced garlic, olive oil, oregano, salt, thyme, black pepper, and red pepper flakes. Toss to coat evenly.
- Place feta cheese in the center of the dish and gently nestle it among the vegetables.
- Bake for 15 minutes until vegetables are tender and feta is slightly softened.
- Remove from oven, add chopped spinach, and make four small wells in the mixture. Crack one egg into each well.
- Return to oven and bake for 10-12 minutes, or until eggs are set to your preference.
- Garnish with fresh basil or chives if desired. Serve warm.
