Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • ยฝ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha sauce (adjust for spice level)
  • 1 tbsp soy sauce
  • 2 tbsp oil (for cooking)
  • Salt and pepper to taste
  • Sesame seeds (for garnish)


Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and soy sauce to make the Bang Bang sauce.
  3. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through, about 5โ€“7 minutes per side. Remove from skillet and slice.
  4. In the same skillet, lightly sautรฉ broccoli, bell pepper, and carrot for 3โ€“4 minutes until slightly tender but still crisp.
  5. Assemble bowls with rice, vegetables, and sliced chicken. Drizzle Bang Bang sauce on top.
