Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cups cooked rice (white or brown)
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 3 green onions, chopped
- ยฝ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha sauce (adjust for spice level)
- 1 tbsp soy sauce
- 2 tbsp oil (for cooking)
- Salt and pepper to taste
- Sesame seeds (for garnish)
Instructions
- Cook rice according to package instructions and set aside.
- In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and soy sauce to make the Bang Bang sauce.
- Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through, about 5โ7 minutes per side. Remove from skillet and slice.
- In the same skillet, lightly sautรฉ broccoli, bell pepper, and carrot for 3โ4 minutes until slightly tender but still crisp.
- Assemble bowls with rice, vegetables, and sliced chicken. Drizzle Bang Bang sauce on top.
- Garnish with chopped green onions and sesame seeds. Serve immediately.
