Description

This BBQ Chicken Mac and Cheese combines smoky barbecue flavors with creamy, cheesy pasta for the ultimate comfort food. Tender shredded chicken, gooey cheeses, and a hint of smoky spices create a hearty dish everyone will love.


Ingredients

  • 1 lb (450g) chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • 8 oz (225g) elbow macaroni or pasta of choice
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk (low-fat preferred)
  • 1/2 cup BBQ sauce (your favorite brand)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add shredded chicken and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Stir for 2–3 minutes until warmed through.
  3. Reduce heat to low. Add milk, BBQ sauce, cheddar cheese, and mozzarella cheese to the skillet. Stir until cheeses are melted and the sauce is smooth.
  4. Add the cooked pasta to the skillet and toss until fully coated in the cheesy BBQ sauce.
  5. Cook for another 2–3 minutes to allow flavors to meld. Taste and adjust seasoning if needed.
  6. Garnish with fresh parsley if desired and serve warm.

Notes

  • Use a smoky or spicy BBQ sauce for extra depth of flavor.
  • For a baked version, transfer to a casserole dish, top with extra cheese, and bake at 375°F (190°C) for 10 minutes.
  • Rotisserie chicken works well as a quick substitute for cooked chicken.
