These Beef and Cheese Chimichangas are crispy, golden, and packed with flavorful seasoned beef, melted cheese, and refried beans. Perfect for a quick family dinner or a fun Mexican-inspired meal at home.
Ingredients
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning or homemade
- ยฝ cup salsa
- 1 cup refried beans
- 1 ยฝ cups shredded cheddar cheese or Mexican blend
- 6 large flour tortillas (burrito-size)
- 2 tablespoons vegetable oil (for brushing or frying)
Instructions
- Preheat oven to 400ยฐF (200ยฐC) if baking, or heat oil in a skillet if frying.
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess fat.
- Add garlic and cook for 30 seconds.
- Stir in taco seasoning, salsa, and refried beans. Mix well and simmer for 3โ4 minutes.
- Remove from heat and stir in shredded cheese until melted.
- Spoon filling onto each tortilla. Fold sides inward, then roll tightly into a burrito shape.
- For baking: Place seam-side down on a greased baking sheet, brush with oil, and bake 18โ20 minutes until golden and crispy.
- For frying: Heat oil in a skillet and cook seam-side down until golden on all sides. Drain on paper towels.
- Serve warm with sour cream, guacamole, or extra salsa.
