Description

Beef Tips and Noodles is a comforting classic meal featuring tender chunks of beef simmered in a savory sauce with aromatics and served over wide egg noodles. Perfect for family dinners, this dish is hearty, flavorful, and satisfying.

Ingredients

  • 1.5 pounds beef roast, cut into 1-inch pieces
  • 1 Tbsp butter
  • ½ onion, diced
  • 3 cups beef broth
  • 2 bay leaves
  • ½ tsp dried thyme leaves
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 Tbsp cornstarch
  • ¼ cup cold water
  • 12 oz extra wide egg noodles

Instructions

  1. In a large skillet or Dutch oven, melt butter over medium heat.
  2. Add beef pieces and brown on all sides. Remove and set aside.
  3. Add diced onion to the pan and sauté until softened.
  4. Return beef to the pan and add beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until beef is tender.
  5. In a small bowl, mix cornstarch and cold water to make a slurry. Stir into the simmering beef mixture and cook until sauce thickens.
  6. Meanwhile, cook egg noodles according to package instructions and drain.
  7. Serve beef tips over cooked noodles, spooning sauce on top. Remove bay leaves before serving.

Notes

  • Use chuck roast or other braising beef for the best tenderness.
  • Add mushrooms or carrots for extra flavor and texture.
