Description
Beef Tips and Noodles is a comforting classic meal featuring tender chunks of beef simmered in a savory sauce with aromatics and served over wide egg noodles. Perfect for family dinners, this dish is hearty, flavorful, and satisfying.
Ingredients
- 1.5 pounds beef roast, cut into 1-inch pieces
- 1 Tbsp butter
- ½ onion, diced
- 3 cups beef broth
- 2 bay leaves
- ½ tsp dried thyme leaves
- ½ tsp salt
- 1 tsp black pepper
- 1 Tbsp cornstarch
- ¼ cup cold water
- 12 oz extra wide egg noodles
Instructions
- In a large skillet or Dutch oven, melt butter over medium heat.
- Add beef pieces and brown on all sides. Remove and set aside.
- Add diced onion to the pan and sauté until softened.
- Return beef to the pan and add beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until beef is tender.
- In a small bowl, mix cornstarch and cold water to make a slurry. Stir into the simmering beef mixture and cook until sauce thickens.
- Meanwhile, cook egg noodles according to package instructions and drain.
- Serve beef tips over cooked noodles, spooning sauce on top. Remove bay leaves before serving.

- Use chuck roast or other braising beef for the best tenderness.
- Add mushrooms or carrots for extra flavor and texture.
