Description

This Berry French Toast Casserole is a perfect make-ahead breakfast or brunch treat. Layers of French bread soaked in a sweet, custardy egg mixture are baked with fresh strawberries and blueberries, creating a soft, flavorful, and fruity breakfast casserole that’s perfect for family mornings or special occasions.

Ingredients

  • 12-14 cups French bread, cubed
  • 8 large eggs
  • 2 cups 2% milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 2/3 cup brown sugar
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1-2 tbsp powdered sugar
  • Maple syrup, as desired

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Spread cubed French bread evenly in the prepared dish.
  3. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and brown sugar until well combined.
  4. Pour the egg mixture over the bread, making sure all pieces are soaked.
  5. Gently fold in the strawberries and blueberries.
  6. Bake for 45-50 minutes, or until the casserole is set and lightly golden on top.
  7. Let cool slightly, dust with powdered sugar, and serve with maple syrup.

Notes

  • Make the casserole the night before and refrigerate overnight for an easy morning bake.
