Description
This Blackened Shrimp Stroganoff is a bold and creamy twist on the classic comfort dish. Tender Cajun-seasoned shrimp meets a rich mushroom stroganoff sauce, tossed with fettuccini for an easy, flavorful dinner ready in under 30 minutes.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 6 ounces fettuccini pasta
- 1 tablespoon butter
- 3 cups fresh mushrooms, sliced
- 1 tablespoon chopped shallots
- ⅔ cup chicken broth
- ½ cup sour cream
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 1 (7-ounce) jar roasted red bell peppers, drained and chopped
- 1 tablespoon drained capers

Instructions
- Bring a large pot of salted water to a boil and cook the fettuccini according to package directions. Drain and set aside.
- In a mixing bowl, toss the shrimp with olive oil and Cajun seasoning until well coated.
- Heat a large frying pan over medium-high heat. Add the seasoned shrimp and cook for 2–3 minutes per side until blackened and opaque. Remove from the pan and set aside.
- In the same pan, melt the butter. Add the sliced mushrooms and shallots. Cook for 4–5 minutes until softened.
- Pour in ⅔ cup chicken broth and bring to a simmer.
- In a small bowl, whisk together the sour cream, cornstarch, and 1 cup chicken broth until smooth.
- Add the sour cream mixture to the pan and stir until the sauce thickens.
- Stir in the chopped roasted red peppers and capers. Simmer for 2 minutes.
- Add the cooked fettuccini and blackened shrimp back into the pan. Toss to coat evenly in the sauce.
- Serve warm with extra Cajun seasoning or fresh herbs if desired.

- Replace shrimp with chicken or tofu for variations.
- Use smoked paprika for a milder flavor if you prefer less spice.
- For a thicker sauce, add an extra teaspoon of cornstarch.
