Description

This Blackened Shrimp Stroganoff is a bold and creamy twist on the classic comfort dish. Tender Cajun-seasoned shrimp meets a rich mushroom stroganoff sauce, tossed with fettuccini for an easy, flavorful dinner ready in under 30 minutes.


Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 6 ounces fettuccini pasta
  • 1 tablespoon butter
  • 3 cups fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • ⅔ cup chicken broth
  • ½ cup sour cream
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 (7-ounce) jar roasted red bell peppers, drained and chopped
  • 1 tablespoon drained capers

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccini according to package directions. Drain and set aside.
  2. In a mixing bowl, toss the shrimp with olive oil and Cajun seasoning until well coated.
  3. Heat a large frying pan over medium-high heat. Add the seasoned shrimp and cook for 2–3 minutes per side until blackened and opaque. Remove from the pan and set aside.
  4. In the same pan, melt the butter. Add the sliced mushrooms and shallots. Cook for 4–5 minutes until softened.
  5. Pour in ⅔ cup chicken broth and bring to a simmer.
  6. In a small bowl, whisk together the sour cream, cornstarch, and 1 cup chicken broth until smooth.
  7. Add the sour cream mixture to the pan and stir until the sauce thickens.
  8. Stir in the chopped roasted red peppers and capers. Simmer for 2 minutes.
  9. Add the cooked fettuccini and blackened shrimp back into the pan. Toss to coat evenly in the sauce.
  10. Serve warm with extra Cajun seasoning or fresh herbs if desired.
