Description
These Blueberry and Lemon Zest Cottage Cheese Bites are a quick, healthy, and protein-packed snack. Soft, fluffy, and bursting with berries, they make the perfect grab-and-go treat for any time of day.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1 large egg
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Zest of 1 large lemon (about 1 tbsp)
- 1/2 tsp baking powder
- Pinch of salt
- 3/4 cup fresh or frozen blueberries (do not thaw)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a mixing bowl, combine cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Mix until well combined.
- Gently fold in the blueberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20–25 minutes or until the tops are golden and set.
- Allow to cool for 5 minutes before removing from the tin. Enjoy warm or cold!
Notes
- Use fresh or frozen berries — do not thaw frozen berries to prevent excess moisture.
- Store in an airtight container in the fridge for up to 3 days.
- Optional: sprinkle with a little extra lemon zest on top before baking for extra flavor.
