Description

These Blueberry and Lemon Zest Cottage Cheese Bites are a quick, healthy, and protein-packed snack. Soft, fluffy, and bursting with berries, they make the perfect grab-and-go treat for any time of day.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 3/4 cup fresh or frozen blueberries (do not thaw)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
  2. In a mixing bowl, combine cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Mix until well combined.
  3. Gently fold in the blueberries.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20–25 minutes or until the tops are golden and set.
  6. Allow to cool for 5 minutes before removing from the tin. Enjoy warm or cold!

Notes

  • Use fresh or frozen berries — do not thaw frozen berries to prevent excess moisture.
  • Store in an airtight container in the fridge for up to 3 days.
  • Optional: sprinkle with a little extra lemon zest on top before baking for extra flavor.
