Blueberry Cottage Cheese Breakfast Bake is a healthy and delicious baked breakfast, combining protein-rich cottage cheese, fresh blueberries, and wholesome oats for a nutritious start to your day.
Ingredients
- 2 cups low-fat cottage cheese, room temperature
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup almond milk or milk of choice
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts, optional – almonds or walnuts
- 1 tablespoon chia seeds, optional
- cooking spray or butter for greasing
Instructions
- Preheat oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
- In a large bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla, cinnamon, and salt until smooth.
- Add rolled oats, almond milk, and mix until combined.
- Gently fold in blueberries, nuts, and chia seeds if using.
- Pour mixture into prepared baking dish and spread evenly.
- Bake for 35–40 minutes until set and lightly golden on top.
- Allow to cool slightly before serving. Serve warm or at room temperature.
Notes
- Use fresh or frozen blueberries—no need to thaw frozen.
- For extra sweetness, drizzle a little honey on top before serving.
- Can be made ahead and stored in the fridge for 2–3 days.
