Description

Blueberry Cottage Cheese Breakfast Bake is a healthy and delicious baked breakfast, combining protein-rich cottage cheese, fresh blueberries, and wholesome oats for a nutritious start to your day.


Ingredients

  • 2 cups low-fat cottage cheese, room temperature
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup almond milk or milk of choice
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts, optional – almonds or walnuts
  • 1 tablespoon chia seeds, optional
  • cooking spray or butter for greasing


Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
  2. In a large bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla, cinnamon, and salt until smooth.
  3. Add rolled oats, almond milk, and mix until combined.
  4. Gently fold in blueberries, nuts, and chia seeds if using.
  5. Pour mixture into prepared baking dish and spread evenly.
  6. Bake for 35–40 minutes until set and lightly golden on top.
  7. Allow to cool slightly before serving. Serve warm or at room temperature.

Notes

  • Use fresh or frozen blueberries—no need to thaw frozen.
  • For extra sweetness, drizzle a little honey on top before serving.
  • Can be made ahead and stored in the fridge for 2–3 days.
