Bold Huevos Rancheros Breakfast Casserole is a vibrant, flavorful breakfast bake featuring layers of corn tortillas, eggs, black beans, cheddar cheese, and a zesty salsa, finished with fresh avocado, cilantro, and sour cream. Perfect for a hearty brunch or family breakfast.
Ingredients
- 1 avocado, sliced
- 1/2 cup black beans
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, sliced
- 6 large eggs
- 1 cup salsa, store-bought or homemade
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1/2 tsp ground cumin
- 8 corn tortillas
- 1 cup cheddar cheese, shredded
- 1 cup milk
- 1/2 cup sour cream
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Layer 4 tortillas on the bottom of the dish.
- Spread black beans, half the cheese, and a portion of salsa over the tortillas.
- In a bowl, whisk eggs with milk, paprika, cumin, salt, and pepper.
- Pour half of the egg mixture over the layered tortillas.
- Add remaining tortillas, beans, cheese, and salsa.
- Pour remaining egg mixture over the top layer.
- Bake uncovered for 25–30 minutes until eggs are set and top is golden.
- Garnish with sliced avocado, cilantro, jalapeno, and a dollop of sour cream before serving.
Notes
- Adjust spice level by using more or fewer jalapenos.
- Make ahead: Assemble the casserole the night before and refrigerate until ready to bake.
- Serve with warm tortillas or salsa on the side.
