Description

Bold Huevos Rancheros Breakfast Casserole is a vibrant, flavorful breakfast bake featuring layers of corn tortillas, eggs, black beans, cheddar cheese, and a zesty salsa, finished with fresh avocado, cilantro, and sour cream. Perfect for a hearty brunch or family breakfast.


Ingredients

  • 1 avocado, sliced
  • 1/2 cup black beans
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, sliced
  • 6 large eggs
  • 1 cup salsa, store-bought or homemade
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/2 tsp ground cumin
  • 8 corn tortillas
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 1/2 cup sour cream


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Layer 4 tortillas on the bottom of the dish.
  3. Spread black beans, half the cheese, and a portion of salsa over the tortillas.
  4. In a bowl, whisk eggs with milk, paprika, cumin, salt, and pepper.
  5. Pour half of the egg mixture over the layered tortillas.
  6. Add remaining tortillas, beans, cheese, and salsa.
  7. Pour remaining egg mixture over the top layer.
  8. Bake uncovered for 25–30 minutes until eggs are set and top is golden.
  9. Garnish with sliced avocado, cilantro, jalapeno, and a dollop of sour cream before serving.

Notes

  • Adjust spice level by using more or fewer jalapenos.
  • Make ahead: Assemble the casserole the night before and refrigerate until ready to bake.
  • Serve with warm tortillas or salsa on the side.
