Description
This Broccoli, Rice, Cheese, and Chicken Casserole is a comforting one-dish meal loaded with tender chicken, fluffy rice, crisp-tender broccoli, and a creamy cheese sauce—perfect for family dinners.
Ingredients
- 2 cups water
- 2 cups uncooked rice
- 1 -10 ounce can cream of chicken soup
- 1 -10 ounce can cream of mushroom soup
- 2 cups cooked chicken, shredded
- ¼ cup butter
- 1 cup milk
- 1 small white onion, chopped
- 16 ounces broccoli pieces
- 2 cups Cheddar cheese, shredded
Instructions
- Preheat oven to 350°F (175°C).
- In a large saucepan, bring water to a boil. Add rice and cook according to package instructions. Drain if needed.
- In a large bowl, combine cooked rice, shredded chicken, chopped onion, broccoli, cream of chicken soup, cream of mushroom soup, butter, milk, and 1 cup of shredded Cheddar cheese. Mix well.
- Pour mixture into a greased 9×13-inch baking dish. Top with remaining 1 cup of Cheddar cheese.
- Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
- Remove from oven and let rest 5 minutes before serving.
Notes
- For added flavor, sprinkle paprika or garlic powder on top before baking.
- Can substitute cooked rice with brown rice or quinoa for a healthier twist.
- Leftovers store well in the refrigerator for up to 3 days.
