This Brown Sugar Pineapple Chicken is sweet, savory, and perfectly balanced. Juicy chicken is cooked in a sticky brown sugar soy glaze with tender pineapple chunks for an easy skillet dinner bursting with tropical flavor.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 cup pineapple chunks (fresh or canned in juice)
- ยฝ cup brown sugar
- ยผ cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp olive oil
- ยฝ tsp chili flakes (optional)
- 2 tbsp lime juice
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook for 5โ6 minutes per side until browned. Remove and set aside.
- In the same skillet, add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in brown sugar, soy sauce, lime juice, and chili flakes.
- Add pineapple chunks and simmer for 2โ3 minutes.
- Return chicken to skillet and coat with sauce.
- Simmer for 6โ8 minutes until sauce thickens and chicken is cooked through.
- Garnish with fresh cilantro and serve.
Notes
- Serve over rice or quinoa to soak up the sauce.
- Chicken thighs add extra juiciness.
- Adjust sweetness by reducing brown sugar if desired.
