Description

This Brown Sugar Pineapple Chicken is sweet, savory, and perfectly balanced. Juicy chicken is cooked in a sticky brown sugar soy glaze with tender pineapple chunks for an easy skillet dinner bursting with tropical flavor.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ยฝ cup brown sugar
  • ยผ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • ยฝ tsp chili flakes (optional)
  • 2 tbsp lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook for 5โ€“6 minutes per side until browned. Remove and set aside.
  4. In the same skillet, add garlic and ginger; cook for 30 seconds until fragrant.
  5. Stir in brown sugar, soy sauce, lime juice, and chili flakes.
  6. Add pineapple chunks and simmer for 2โ€“3 minutes.
  7. Return chicken to skillet and coat with sauce.
  8. Simmer for 6โ€“8 minutes until sauce thickens and chicken is cooked through.
  9. Garnish with fresh cilantro and serve.
