Description
A creamy, spicy Cajun Chicken recipe with tender chicken breasts simmered in a rich sauce of chicken broth, heavy cream, honey, hot sauce, and spices. Finished with cheddar jack cheese and fresh lime juice, served with lime wedges and cilantro.
Ingredients
- 1 ½ cups chicken broth
- ¾ cups heavy cream (can substitute half and half)
- 1 tablespoon honey
- 2 teaspoons hot sauce
- 2 teaspoons Cajun seasoning
- 1 teaspoon brown sugar (light preferred)
- ½ teaspoon mustard powder
- ½ teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- 2 large boneless skinless chicken breasts
- 1 ½ teaspoons Cajun seasoning
- 3 tablespoons flour
- 1-2 tablespoons olive oil or avocado oil
- 3 tablespoons butter
- 3 cloves garlic, minced
- 3 tablespoons flour
- 10 oz Rotel diced tomatoes with green chilies (juice reserved)
- ¾ cup shredded cheddar jack cheese
- 2 teaspoons lime juice
- Lime wedges (for serving)
- Fresh cilantro, roughly chopped (for serving)
Instructions
- Season chicken breasts with Cajun seasoning and dredge in flour.
- Heat olive oil in a skillet over medium heat; cook chicken until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant.
- Whisk in flour and cook for 1-2 minutes to make a roux.
- Slowly whisk in chicken broth, heavy cream, honey, hot sauce, Cajun seasoning, brown sugar, mustard powder, oregano, cayenne, and red pepper flakes.
- Simmer the sauce until it thickens, about 5 minutes.
- Stir in reserved Rotel juice, diced tomatoes, and cheddar jack cheese until cheese melts.
- Add lime juice and return chicken to the skillet, coating it with the sauce.
- Cook for a few more minutes to heat through.
- Serve hot with lime wedges and garnish with fresh cilantro.

- Adjust spice level by varying hot sauce and cayenne amounts.
- Serve over rice or with crusty bread to soak up sauce.
