Description

This Cajun White Chicken Chili is a creamy, spicy, and flavorful comfort food. Loaded with tender chicken, white beans, and a touch of heat from jalapeños, it’s perfect for a hearty weeknight meal.


Ingredients

  • 2 large chicken breasts (or thighs)
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, red bell pepper, and jalapeño until softened.
  3. Add Cajun seasoning and stir for 1 minute.
  4. Return chicken to the pot, add white beans and chicken broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  5. Stir in cream cheese and heavy cream until smooth and creamy.
  6. Add lime juice and season with salt and pepper to taste.
  7. Garnish with fresh cilantro and serve hot.

  • Use leftover rotisserie chicken to save time.
  • Adjust jalapeño amount for desired heat.
