This Cajun White Chicken Chili is a creamy, spicy, and flavorful comfort food. Loaded with tender chicken, white beans, and a touch of heat from jalapeños, it’s perfect for a hearty weeknight meal.
Ingredients
- 2 large chicken breasts (or thighs)
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 0.5 cup heavy cream
- 1 tablespoon lime juice
- 0.25 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
- In the same pot, sauté onion, garlic, red bell pepper, and jalapeño until softened.
- Add Cajun seasoning and stir for 1 minute.
- Return chicken to the pot, add white beans and chicken broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
- Stir in cream cheese and heavy cream until smooth and creamy.
- Add lime juice and season with salt and pepper to taste.
- Garnish with fresh cilantro and serve hot.

- Use leftover rotisserie chicken to save time.
- Adjust jalapeño amount for desired heat.
