Description
Cattle Drive Casserole is a hearty, Tex-Mex–inspired comfort dish packed with seasoned ground beef, creamy biscuit batter, green chiles, salsa, and melty cheddar cheese. It’s bold, filling, and perfect for feeding a hungry crowd.
Ingredients
- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 1/2 cups biscuit mix (such as Bisquick)
- 1 cup water
- Cooking spray (such as Pam)
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 1/2 cups cheddar cheese or Fiesta blend, shredded and divided
- 1 teaspoon garlic powder
- 1/2 cup mild salsa
Instructions
- Preheat oven to 375°F (190°C). Spray a 9×13-inch casserole dish with cooking spray.
- In a large skillet over medium heat, brown the ground beef with chopped onion and red bell pepper until fully cooked. Drain excess grease.
- Stir in taco seasoning and cook for 1 minute. Remove from heat.
- In a medium bowl, whisk together biscuit mix and water until smooth.
- In another bowl, mix sour cream, mayonnaise, diced green chiles, garlic powder, salsa, and 1 cup of shredded cheese.
- Spread the beef mixture evenly into the prepared casserole dish.
- Pour biscuit mixture over the beef, spreading gently.
- Spoon the creamy chile mixture over the top.
- Sprinkle with remaining 1/2 cup shredded cheese.
- Bake uncovered for 30–35 minutes, until set and golden.
- Let rest 5–10 minutes before serving.
Notes
- For extra heat, use hot salsa or add jalapeños.
- Ground turkey can be substituted for beef.
- This casserole is great served with a green salad or corn on the side.
