Description

Cattle Drive Casserole is a hearty, Tex-Mex–inspired comfort dish packed with seasoned ground beef, creamy biscuit batter, green chiles, salsa, and melty cheddar cheese. It’s bold, filling, and perfect for feeding a hungry crowd.


Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 1/2 cups biscuit mix (such as Bisquick)
  • 1 cup water
  • Cooking spray (such as Pam)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 1/2 cups cheddar cheese or Fiesta blend, shredded and divided
  • 1 teaspoon garlic powder
  • 1/2 cup mild salsa


Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch casserole dish with cooking spray.
  2. In a large skillet over medium heat, brown the ground beef with chopped onion and red bell pepper until fully cooked. Drain excess grease.
  3. Stir in taco seasoning and cook for 1 minute. Remove from heat.
  4. In a medium bowl, whisk together biscuit mix and water until smooth.
  5. In another bowl, mix sour cream, mayonnaise, diced green chiles, garlic powder, salsa, and 1 cup of shredded cheese.
  6. Spread the beef mixture evenly into the prepared casserole dish.
  7. Pour biscuit mixture over the beef, spreading gently.
  8. Spoon the creamy chile mixture over the top.
  9. Sprinkle with remaining 1/2 cup shredded cheese.
  10. Bake uncovered for 30–35 minutes, until set and golden.
  11. Let rest 5–10 minutes before serving.

Notes

  • For extra heat, use hot salsa or add jalapeños.
  • Ground turkey can be substituted for beef.
  • This casserole is great served with a green salad or corn on the side.
