Ingredients
- 12 oz refrigerated cheese tortellini
- 1 tbsp olive oil
- 1 lb thinly sliced beef (ribeye or sirloin), cut into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1ยฝ cups milk
- 1 cup beef broth
- 8 oz provolone cheese, shredded
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add beef strips and cook until browned. Remove and set aside.
- In the same skillet, sautรฉ bell peppers, onions, and garlic until softened.
- Sprinkle flour over vegetables and stir to coat evenly. Cook 1โ2 minutes.
- Gradually whisk in milk and beef broth. Simmer until sauce thickens.
- Stir in provolone cheese until melted and smooth.
- Add cooked tortellini and beef back into the skillet. Toss gently to coat with sauce.
- Garnish with fresh parsley and serve immediately.

- Use freshly shredded provolone for best melting results.
- Add a pinch of crushed red pepper for a little heat.
