Ingredients

  • 12 oz refrigerated cheese tortellini
  • 1 tbsp olive oil
  • 1 lb thinly sliced beef (ribeye or sirloin), cut into strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1ยฝ cups milk
  • 1 cup beef broth
  • 8 oz provolone cheese, shredded
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional for garnish)


Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add beef strips and cook until browned. Remove and set aside.
  3. In the same skillet, sautรฉ bell peppers, onions, and garlic until softened.
  4. Sprinkle flour over vegetables and stir to coat evenly. Cook 1โ€“2 minutes.
  5. Gradually whisk in milk and beef broth. Simmer until sauce thickens.
  6. Stir in provolone cheese until melted and smooth.
  7. Add cooked tortellini and beef back into the skillet. Toss gently to coat with sauce.
  8. Garnish with fresh parsley and serve immediately.
