Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- ยผ teaspoon garlic powder
- ยผ teaspoon onion powder
- 4 ounces cream cheese, softened
- ยผ cup grated Parmesan cheese
- 2 tablespoons mayonnaise
- 1ยฝ cups chopped fresh spinach
- 1 teaspoon minced garlic
- ยฝ teaspoon red pepper flakes
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking dish.
- Slice a pocket into each chicken breast. Rub with oil, paprika, garlic powder, onion powder, and half the salt.
- In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining salt.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
- Place chicken in the baking dish and bake uncovered for 25โ30 minutes, until cooked through.
- Let rest 5 minutes before serving.

- Use frozen spinach if neededโjust thaw and squeeze dry.
