Description

This Cheesy Taco Rice Recipe is a flavorful one-pot meal made with seasoned ground beef, tender rice, Rotel tomatoes, and plenty of melted cheese. Itโ€™s quick, comforting, and perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 1/4 cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1 1/2 cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add diced onion and cook for 2โ€“3 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Mix in taco seasoning and tomato paste. Stir well.
  5. Add uncooked rice, beef broth, and Rotel (with juices). Stir to combine.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 18โ€“20 minutes, or until rice is tender and liquid is absorbed.
  7. Remove from heat and stir in shredded cheese until melted and creamy.
  8. Let rest for 5 minutes before serving.

Notes

  • Use mild or hot Rotel depending on spice preference.
  • Swap ground beef for ground turkey if desired.
  • Add black beans or corn for extra texture.
  • Top with sour cream, green onions, or fresh cilantro.
