Description
The Chicken Avocado Melt Sandwich combines tender grilled chicken breasts, creamy avocado slices, melted cheese, and fresh veggies on your choice of bread. It’s a hearty, flavorful sandwich perfect for lunch or a quick dinner.
Ingredients
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken until cooked through, about 5-7 minutes per side. Let rest and slice thinly.
- Mix mayonnaise and Dijon mustard in a small bowl.
- Spread mayo-mustard mixture on one side of each bread slice.
- Layer sliced chicken, avocado, cheese, onion, and tomato on two bread slices.
- Top with remaining bread slices, spread side down.
- Butter the outsides of the sandwich and grill in a skillet over medium heat until bread is golden brown and cheese melts, about 3-4 minutes per side.
- Serve warm.
Notes
- Use your favorite bread for best results.
- To add extra flavor, sprinkle some smoked paprika on chicken before cooking.
- Avocado adds creaminess but can be substituted with guacamole or sliced cucumber.
