Description

This Chicken Avocado Melt Sandwich is a delicious combination of tender chicken, creamy avocado, melted cheese, and fresh veggies on toasted bread. Perfect for a satisfying lunch or quick dinner.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling


Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until fully cooked and golden, about 5–6 minutes per side. Slice thinly.
  2. Mix mayonnaise and Dijon mustard in a small bowl and spread evenly on the bread slices.
  3. Layer the sliced chicken, avocado, cheese, tomato, and red onion on two slices of bread. Top with the remaining bread slices.
  4. Heat a skillet or griddle over medium heat. Butter or lightly oil the outside of the sandwiches and grill until bread is golden brown and cheese is melted, about 3–4 minutes per side.
  5. Serve immediately, cut in half if desired.
