Description

This Chicken Fajita Casserole is a colorful, flavorful dinner with juicy chicken, sweet bell peppers, and melted cheese. Perfect for busy weeknights and family meals.


Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, split lengthwise, or chicken thigh
  • 3 bell peppers, red, yellow, or green, seeded and sliced into strips
  • 1 large yellow onion, or two medium onions
  • 1 tablespoon olive oil
  • 8 oz Jack cheese, shredded (or cheddar/Havarti)
  • Fresh cilantro, optional garnish
  • Fajita Seasoning: 1 teaspoon cumin powder, 2 teaspoons chili powder, 1 ½ teaspoon garlic powder, 2 teaspoons paprika, salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice chicken and vegetables, then toss chicken with olive oil and fajita seasoning.
  3. In a large skillet, cook chicken until lightly browned, then add peppers and onions and sauté until slightly softened.
  4. Transfer mixture to a baking dish, top with shredded cheese.
  5. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  6. Garnish with fresh cilantro and serve warm.

Notes

  • You can swap chicken breast with thighs for juicier meat.
  • Add extra spice by including sliced jalapeños or cayenne powder.
  • Leftovers store well in the fridge for 2-3 days.
