Description
This Chicken Fajita Casserole is a colorful, flavorful dinner with juicy chicken, sweet bell peppers, and melted cheese. Perfect for busy weeknights and family meals.
Ingredients
- 1 ½ pounds boneless skinless chicken breasts, split lengthwise, or chicken thigh
- 3 bell peppers, red, yellow, or green, seeded and sliced into strips
- 1 large yellow onion, or two medium onions
- 1 tablespoon olive oil
- 8 oz Jack cheese, shredded (or cheddar/Havarti)
- Fresh cilantro, optional garnish
- Fajita Seasoning: 1 teaspoon cumin powder, 2 teaspoons chili powder, 1 ½ teaspoon garlic powder, 2 teaspoons paprika, salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice chicken and vegetables, then toss chicken with olive oil and fajita seasoning.
- In a large skillet, cook chicken until lightly browned, then add peppers and onions and sauté until slightly softened.
- Transfer mixture to a baking dish, top with shredded cheese.
- Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro and serve warm.
Notes
- You can swap chicken breast with thighs for juicier meat.
- Add extra spice by including sliced jalapeños or cayenne powder.
- Leftovers store well in the fridge for 2-3 days.
