Ingredients

  • 1 onion, chopped
  • 5 carrots, chopped
  • 5 celery stalks, chopped
  • 1 cup wild rice
  • 3 cups chicken broth
  • 1 lb chicken breasts, cut into small pieces
  • 10 tablespoons butter, divided
  • 1 teaspoon salt
  • ½ teaspoon poultry seasoning
  • 4 tablespoons flour
  • 2 cups milk
  • 34 cups cubed bread (sturdy, dry, or day-old)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Cook wild rice in chicken broth according to package instructions. Set aside.
  3. In a large skillet, melt 4 tablespoons butter over medium heat. Add chicken, season with salt and poultry seasoning, and cook until lightly browned. Remove and set aside.
  4. In the same skillet, melt 4 tablespoons butter. Add onion, carrots, and celery; cook until softened.
  5. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth and thickened.
  6. Add cooked rice and chicken to the sauce and stir to combine.
  7. Transfer mixture to the prepared casserole dish.
  8. Toss cubed bread with remaining 2 tablespoons melted butter and sprinkle evenly on top.
  9. Bake uncovered for 35–40 minutes until golden and bubbly.

Notes

  • You can substitute rotisserie chicken to save time.
  • Add mushrooms for extra depth of flavor.
