This Chicken Wild Rice Casserole is a hearty, comforting classic made with tender chicken, wholesome wild rice, vegetables, and a creamy homemade sauce. Perfect for cozy dinners, meal prep, or feeding a crowd.
Ingredients
- 1 onion, chopped
- 5 carrots, chopped
- 5 celery stalks, chopped
- 1 cup wild rice
- 3 cups chicken broth
- 1 lb chicken breasts, cut into small pieces
- 10 tablespoons butter, divided
- 1 teaspoon salt
- ½ teaspoon poultry seasoning
- 4 tablespoons flour
- 2 cups milk
- 3–4 cups cubed bread (sturdy, dry, or day-old)
Instructions
- Preheat oven to 375°F (190°C) and grease a casserole dish.
- Cook wild rice in chicken broth according to package instructions. Set aside.
- In a large skillet, melt 4 tablespoons butter over medium heat. Add chicken, season with salt and poultry seasoning, and cook until lightly browned. Remove and set aside.
- In the same skillet, melt 4 tablespoons butter. Add onion, carrots, and celery; cook until softened.
- Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth and thickened.
- Add cooked rice and chicken to the sauce and stir to combine.
- Transfer mixture to the prepared casserole dish.
- Toss cubed bread with remaining 2 tablespoons melted butter and sprinkle evenly on top.
- Bake uncovered for 35–40 minutes until golden and bubbly.
Notes
- You can substitute rotisserie chicken to save time.
- Add mushrooms for extra depth of flavor.
- Leftovers store well and reheat beautifully.
