Ingredients
- 1 onion, chopped
- 5 carrots, chopped
- 5 celery stalks, chopped
- 1 cup wild rice
- 3 cups chicken broth
- 1 lb chicken breasts, cut into small pieces
- 10 tbsp butter, divided
- 1 tsp salt
- ½ tsp poultry seasoning
- 4 tbsp flour
- 2 cups milk
- 3-4 cups cubed bread (sturdy or day-old)
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Cook wild rice according to package directions using chicken broth.
- In a skillet, melt 6 tbsp butter over medium heat. Sauté onion, carrots, and celery until softened, about 5–6 minutes.
- Add chicken pieces to the skillet and cook until lightly browned.
- Sprinkle flour over the vegetables and chicken, stirring to coat evenly. Gradually add milk, stirring until sauce thickens.
- Mix in cooked wild rice, salt, and poultry seasoning. Transfer mixture to the prepared baking dish.
- Top with cubed bread and dot with remaining 4 tbsp butter.
- Bake uncovered for 30–35 minutes, until casserole is bubbly and top is golden.
Notes
- Use day-old bread for a crispier topping.
- Optional: add shredded cheese on top for extra richness.
