Ingredients

  • Chicken Marinade
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup shredded lettuce
  • ยฝ cup diced tomatoes
  • ยฝ cup corn kernels (optional)
  • ยผ cup chopped cilantro (optional)
  • ยฝ cup chipotle ranch dressing


Instructions

  1. In a bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Cook chicken 6โ€“8 minutes per side, or until fully cooked (internal temperature 165ยฐF / 74ยฐC). Let rest 5 minutes, then slice thinly.
  3. Warm tortillas on the grill or in a skillet for 30 seconds per side.
  4. Assemble burritos: layer rice, black beans, sliced chicken, cheese, lettuce, tomatoes, corn, cilantro, and drizzle with chipotle ranch dressing.
  5. Fold sides in and roll tightly. Serve immediately.
