Ingredients
- Chicken Marinade
- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste

- 4 large flour tortillas
- 1 cup cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup shredded lettuce
- ยฝ cup diced tomatoes
- ยฝ cup corn kernels (optional)
- ยผ cup chopped cilantro (optional)
- ยฝ cup chipotle ranch dressing
Instructions
- In a bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Preheat grill or grill pan over medium-high heat. Cook chicken 6โ8 minutes per side, or until fully cooked (internal temperature 165ยฐF / 74ยฐC). Let rest 5 minutes, then slice thinly.
- Warm tortillas on the grill or in a skillet for 30 seconds per side.
- Assemble burritos: layer rice, black beans, sliced chicken, cheese, lettuce, tomatoes, corn, cilantro, and drizzle with chipotle ranch dressing.
- Fold sides in and roll tightly. Serve immediately.
