Description
These Chocolate Chip Peanut Butter Oatmeal Bars are chewy, nutty, and full of chocolatey goodness. Perfect for an energy boost, lunchbox treat, or quick snack.
Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup flour (all-purpose or whole wheat)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup peanut butter (smooth or chunky)
- 1/2 cup brown sugar (packed)
- 1/4 cup honey or maple syrup
- 1/4 cup butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips (or regular chips)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix oats, flour, baking soda, and salt.
- In a separate large bowl, beat peanut butter, brown sugar, honey (or maple syrup), butter, egg, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in chocolate chips.
- Spread the batter evenly into the prepared pan.
- Bake for 20–25 minutes, or until golden and set.
- Allow to cool completely before cutting into bars.
Notes
- You can use all almond butter for a different flavor.
- Store in an airtight container for up to 4 days or freeze for longer storage.
- Optional: drizzle melted chocolate over the bars for extra indulgence.
