Description

These Chocolate Chip Peanut Butter Oatmeal Bars are chewy, nutty, and full of chocolatey goodness. Perfect for an energy boost, lunchbox treat, or quick snack.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup flour (all-purpose or whole wheat)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanut butter (smooth or chunky)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup honey or maple syrup
  • 1/4 cup butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips (or regular chips)


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix oats, flour, baking soda, and salt.
  3. In a separate large bowl, beat peanut butter, brown sugar, honey (or maple syrup), butter, egg, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in chocolate chips.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 20–25 minutes, or until golden and set.
  8. Allow to cool completely before cutting into bars.

Notes

  • You can use all almond butter for a different flavor.
  • Store in an airtight container for up to 4 days or freeze for longer storage.
