Ingredients

  • 2/3 cup unsalted butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • Red gel food coloring
  • Green gel food coloring
  • Red sanding sugar, for garnish


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Beat in egg and vanilla extract until combined.
  4. In a separate bowl, whisk together flour, salt, and baking soda.
  5. Gradually mix the dry ingredients into the wet ingredients until dough forms.
  6. Divide the dough into three portions: one plain, one tinted with red gel, and one tinted with green gel.
  7. Roll each colored dough into flat rectangles of equal size.
  8. Layer the dough rectangles, roll tightly into a log, and chill for 30 minutes.
  9. Slice into 1/4-inch thick cookies, place on baking sheet, and sprinkle with red sanding sugar.
  10. Bake for 10–12 minutes or until edges are lightly golden. Cool on a wire rack.
