Description

Chicken and Gravy over mashed potatoes is a classic comfort meal. Juicy chicken breasts smothered in creamy, flavorful gravy served atop fluffy mashed potatoes—perfect for a cozy dinner any night.


Ingredients

  • 1 tablespoon chicken base
  • 2 large chicken breasts, split lengthwise
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 pot instant mashed potatoes
  • 2 cups chicken stock
  • 4 tablespoons all-purpose flour
  • Kosher salt & black pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • ½ cup water


Instructions

  1. Prepare mashed potatoes according to package instructions and set aside.
  2. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through. Remove and keep warm.
  4. In the same skillet, melt butter and whisk in flour to make a roux, cooking 1–2 minutes.
  5. Gradually add chicken stock and water, whisking constantly until smooth and slightly thickened.
  6. Stir in chicken base and heavy cream, simmer 3–4 minutes until gravy is creamy and flavorful.
  7. Return chicken to the skillet and coat with gravy. Serve over prepared mashed potatoes.

Notes

  • For extra flavor, add a pinch of paprika or fresh herbs to the gravy.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • You can substitute rotisserie chicken for faster prep.
