Description
Chicken and Gravy over mashed potatoes is a classic comfort meal. Juicy chicken breasts smothered in creamy, flavorful gravy served atop fluffy mashed potatoes—perfect for a cozy dinner any night.
Ingredients
- 1 tablespoon chicken base
- 2 large chicken breasts, split lengthwise
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 pot instant mashed potatoes
- 2 cups chicken stock
- 4 tablespoons all-purpose flour
- Kosher salt & black pepper, to taste
- 1 tablespoon olive oil
- 3 tablespoons butter
- ¼ cup heavy cream
- ½ cup water
Instructions
- Prepare mashed potatoes according to package instructions and set aside.
- Season chicken breasts with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through. Remove and keep warm.
- In the same skillet, melt butter and whisk in flour to make a roux, cooking 1–2 minutes.
- Gradually add chicken stock and water, whisking constantly until smooth and slightly thickened.
- Stir in chicken base and heavy cream, simmer 3–4 minutes until gravy is creamy and flavorful.
- Return chicken to the skillet and coat with gravy. Serve over prepared mashed potatoes.
Notes
- For extra flavor, add a pinch of paprika or fresh herbs to the gravy.
- Leftovers can be stored in the refrigerator for up to 3 days.
- You can substitute rotisserie chicken for faster prep.
