These Comforting Chicken Pillows are flaky, creamy, and pure comfort food. Soft crescent rolls are filled with a rich chicken and cream cheese mixture, baked until golden, and finished with a luscious homemade Parmesan sauce. Perfect for family dinners, potlucks, or cozy nights at home.
Ingredients
- 2 cups cooked shredded chicken
- 1 (8 oz) package cream cheese, softened
- 1/4 cup chopped green onions
- Salt and pepper to taste
- 2 (8 oz) tubes refrigerated crescent rolls
- 1/4 cup (60g) butter, melted
- 1 cup (60g) Italian-seasoned breadcrumbs
- For the Creamy Parmesan Sauce:
- 4 tablespoons (60g) butter
- 1/4 cup (30g) all-purpose flour
- 2 cups (480ml) chicken broth
- 1 cup (240ml) milk
- 1/2 cup (50g) grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a baking dish.
- In a bowl, mix shredded chicken, cream cheese, green onions, salt, and pepper until well combined.
- Separate crescent roll dough into triangles. Place a spoonful of chicken mixture on the wide end of each triangle and roll up, tucking in the sides.
- Dip each rolled pillow into melted butter, then coat with Italian breadcrumbs.
- Arrange in the baking dish and bake for 20–25 minutes, until golden brown.
- Meanwhile, prepare the sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in chicken broth and milk. Cook until thickened.
- Stir in Parmesan cheese, salt, and pepper. Serve sauce warm over chicken pillows.
Notes
- Rotisserie chicken works great for this recipe.
- You can assemble the pillows ahead of time and bake when ready.
- The sauce can be made thicker or thinner by adjusting the milk.
