Description

These Comforting Chicken Pillows are flaky, creamy, and pure comfort food. Soft crescent rolls are filled with a rich chicken and cream cheese mixture, baked until golden, and finished with a luscious homemade Parmesan sauce. Perfect for family dinners, potlucks, or cozy nights at home.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 2 (8 oz) tubes refrigerated crescent rolls
  • 1/4 cup (60g) butter, melted
  • 1 cup (60g) Italian-seasoned breadcrumbs
  • For the Creamy Parmesan Sauce:
  • 4 tablespoons (60g) butter
  • 1/4 cup (30g) all-purpose flour
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) milk
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a baking dish.
  2. In a bowl, mix shredded chicken, cream cheese, green onions, salt, and pepper until well combined.
  3. Separate crescent roll dough into triangles. Place a spoonful of chicken mixture on the wide end of each triangle and roll up, tucking in the sides.
  4. Dip each rolled pillow into melted butter, then coat with Italian breadcrumbs.
  5. Arrange in the baking dish and bake for 20–25 minutes, until golden brown.
  6. Meanwhile, prepare the sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  7. Gradually whisk in chicken broth and milk. Cook until thickened.
  8. Stir in Parmesan cheese, salt, and pepper. Serve sauce warm over chicken pillows.

Notes

  • Rotisserie chicken works great for this recipe.
  • You can assemble the pillows ahead of time and bake when ready.
  • The sauce can be made thicker or thinner by adjusting the milk.
