Ingredients

  • 3 cups cooked white rice (or brown rice for nuttier flavor)
  • 2 cups shredded cooked chicken
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions (divided for topping and inside the casserole)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/4 cup chopped parsley, for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix together cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, shredded cheese, half of the fried onions, and seasonings.
  3. Transfer the mixture to the prepared baking dish and spread it evenly.
  4. Bake uncovered for 25–30 minutes, until hot and bubbly.
  5. Sprinkle the remaining French fried onions on top and bake for an additional 5 minutes, or until golden brown.
  6. Garnish with chopped parsley and serve warm.
