Ingredients
- 3 cups cooked white rice (or brown rice for nuttier flavor)
- 2 cups shredded cooked chicken
- 1 can cream of chicken soup
- 1 can French onion soup
- 1 cup sour cream (or dairy-free yogurt)
- 1 cup shredded cheese (Mozzarella or Swiss)
- 1 cup French fried onions (divided for topping and inside the casserole)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- 1/4 cup chopped parsley, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, mix together cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, shredded cheese, half of the fried onions, and seasonings.
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- Sprinkle the remaining French fried onions on top and bake for an additional 5 minutes, or until golden brown.
- Garnish with chopped parsley and serve warm.
Notes
- You can use leftover rotisserie chicken or cooked turkey.
