Cowboy Butter Chicken is a rich, savory dish featuring seared chicken breasts coated in a flavorful butter sauce infused with garlic, Dijon mustard, herbs, lemon, and cream. Perfect for a hearty family dinner with a gourmet touch.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (smoked or sweet)
  • 1 tbsp olive oil, for searing
  • 1/2 cup unsalted butter, softened
  • 4 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp fresh dill, chopped (optional)
  • Juice of 1 lemon (~2 tbsp)
  • 1/2 cup chicken broth (or water for lighter option)
  • 1/2 cup heavy cream


Instructions

  1. Season chicken breasts with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken 4–5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and add garlic. Sauté 1–2 minutes until fragrant.
  4. Stir in Dijon mustard, red pepper flakes, parsley, dill, lemon juice, and chicken broth. Simmer 2–3 minutes.
  5. Reduce heat and stir in heavy cream. Simmer until sauce thickens slightly.
  6. Return chicken to skillet and coat with the sauce. Heat through 2–3 minutes.
  7. Garnish with extra parsley and serve warm.

  • Serve with mashed potatoes, rice, or roasted vegetables.
