Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1 cup orange juice (freshly squeezed recommended)
- 1 tablespoon orange zest
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a small saucepan, combine cranberries, orange juice, orange zest, honey, soy sauce, Dijon mustard, and garlic powder. Bring to a simmer and cook for 5โ7 minutes until cranberries burst and sauce thickens slightly.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 2โ3 minutes per side until golden.
- Transfer chicken to a baking dish and pour cranberry-orange glaze over the top.
- Bake for 20โ25 minutes, or until chicken is cooked through (internal temperature 165ยฐF / 74ยฐC).
- Garnish with fresh parsley before serving.
Notes
- Fresh cranberries provide the best flavor, but frozen can be used if thawed first.
- Adjust honey for sweetness preference.
