Ingredients
- 2โ3 cups cooked and shredded chicken breasts or thighs
- 4 cups fresh spinach or 1 package frozen spinach, thawed and drained
- 8 ounces cream cheese, softened
- ยฝ cup sour cream
- 1 cup shredded mozzarella cheese
- ยผ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- ยฝ teaspoon salt
- ยผ teaspoon black pepper
- Pinch of nutmeg (optional)
- Optional additions: sliced mushrooms, artichoke hearts, or cooked pasta
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a large skillet, sautรฉ onion and garlic until fragrant and softened.
- Add spinach and cook until wilted (or heat frozen spinach until warmed through).
- In a mixing bowl, combine shredded chicken, cream cheese, sour cream, mozzarella, Parmesan, cooked spinach, salt, pepper, and nutmeg (if using). Mix until well combined.
- Transfer mixture to a greased baking dish.
- Bake uncovered for 20โ25 minutes, until the casserole is bubbly and top is lightly golden.
- Allow to rest for 5 minutes before serving. Optional: garnish with extra Parmesan or fresh herbs.
