Ingredients

  • 2โ€“3 cups cooked and shredded chicken breasts or thighs
  • 4 cups fresh spinach or 1 package frozen spinach, thawed and drained
  • 8 ounces cream cheese, softened
  • ยฝ cup sour cream
  • 1 cup shredded mozzarella cheese
  • ยผ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • Pinch of nutmeg (optional)
  • Optional additions: sliced mushrooms, artichoke hearts, or cooked pasta


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large skillet, sautรฉ onion and garlic until fragrant and softened.
  3. Add spinach and cook until wilted (or heat frozen spinach until warmed through).
  4. In a mixing bowl, combine shredded chicken, cream cheese, sour cream, mozzarella, Parmesan, cooked spinach, salt, pepper, and nutmeg (if using). Mix until well combined.
