Description

This Creamy Chicken & Mushroom Pasta is a comforting weeknight meal packed with tender chicken, savory mushrooms, and a luscious Parmesan cream sauce tossed with your favorite pasta. A restaurant-quality dish in under 30 minutes!


Ingredients

  • 2 chicken breasts, cubed
  • 1 cup sliced mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 8 oz pasta (spaghetti or linguine)
  • Salt, pepper, and fresh thyme for seasoning


Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove and set aside.
  3. In the same skillet, add mushrooms and cook until softened. Stir in garlic and sauté for 1 minute.
  4. Pour in chicken broth and let simmer for 2 minutes, scraping any browned bits from the pan.
  5. Stir in heavy cream and Parmesan cheese. Simmer gently until sauce thickens.
  6. Add chicken back to the skillet, then toss in cooked pasta. Season with salt, pepper, and fresh thyme.
  7. Serve warm, garnished with extra Parmesan or thyme if desired.
