This Creamy Chicken & Mushroom Pasta is a comforting weeknight meal packed with tender chicken, savory mushrooms, and a luscious Parmesan cream sauce tossed with your favorite pasta. A restaurant-quality dish in under 30 minutes!
Ingredients
- 2 chicken breasts, cubed
- 1 cup sliced mushrooms
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 8 oz pasta (spaghetti or linguine)
- Salt, pepper, and fresh thyme for seasoning
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove and set aside.
- In the same skillet, add mushrooms and cook until softened. Stir in garlic and sauté for 1 minute.
- Pour in chicken broth and let simmer for 2 minutes, scraping any browned bits from the pan.
- Stir in heavy cream and Parmesan cheese. Simmer gently until sauce thickens.
- Add chicken back to the skillet, then toss in cooked pasta. Season with salt, pepper, and fresh thyme.
- Serve warm, garnished with extra Parmesan or thyme if desired.
