Ingredients

  • For the Soup Base:
  • 1 lb ground beef, turkey, or meat alternative
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth (or vegetable broth)
  • 1 (14.5 oz) can diced tomatoes with juice
  • 1 cup corn (canned or frozen)
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 medium Yukon Gold or russet potatoes, diced small
  • For the Spice Blend:
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For Creaminess:
  • 1 cup heavy cream or coconut milk
  • 1 cup shredded cheddar cheese


Instructions

  1. In a large pot over medium heat, cook the ground beef and onion until browned and softened. Drain excess grease if needed.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in smoked paprika, chili powder, cumin, salt, and black pepper. Cook for 1 minute to bloom the spices.
  4. Add diced tomatoes, broth, potatoes, black beans, and corn. Stir well and bring to a boil.
