Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- ½ cup crispy bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Season chicken breasts with garlic powder, onion powder, salt, and pepper. Cook in a large skillet over medium heat until fully cooked; remove and slice.
- In the same skillet, add chicken broth and cream cheese, stirring until smooth and creamy.
- Add gnocchi and cook according to package instructions until tender.
- Stir in spinach, cheddar cheese, and cooked chicken slices. Cook until spinach wilts and cheese melts.
- Sprinkle crispy bacon bits on top before serving.
