Ingredients
- 4 boneless, skinless chicken breasts (or about 1ยผ lb chicken thighs)
- 12 oz twisted pasta (rotini, fusilli, or cavatappi)
- 3 tbsp butter
- 1 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 cup chicken broth
- 1ยผ cups heavy cream
- 1ยฝ cups grated Parmesan cheese
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Cook pasta according to package instructions and set aside.
- In a large skillet, heat butter and olive oil over medium heat. Add minced garlic and sautรฉ for 1 minute until fragrant.
- Season chicken with salt and pepper, then add to the skillet. Cook 5โ7 minutes per side until golden and cooked through.
- Remove chicken and set aside. Pour chicken broth into the skillet, scraping up any browned bits.
- Reduce heat and stir in heavy cream and Parmesan cheese until sauce is smooth and creamy.
- Add cooked pasta to the sauce and toss to coat.
- Return chicken to the skillet, nestling it into the pasta and sauce. Cook 2โ3 minutes more to heat through.
- Sprinkle with chopped parsley and serve warm.
