Ingredients

  • 4 boneless, skinless chicken breasts (or about 1ยผ lb chicken thighs)
  • 12 oz twisted pasta (rotini, fusilli, or cavatappi)
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup chicken broth
  • 1ยผ cups heavy cream
  • 1ยฝ cups grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook pasta according to package instructions and set aside.
  2. In a large skillet, heat butter and olive oil over medium heat. Add minced garlic and sautรฉ for 1 minute until fragrant.
  3. Season chicken with salt and pepper, then add to the skillet. Cook 5โ€“7 minutes per side until golden and cooked through.
  4. Remove chicken and set aside. Pour chicken broth into the skillet, scraping up any browned bits.
  5. Reduce heat and stir in heavy cream and Parmesan cheese until sauce is smooth and creamy.
  6. Add cooked pasta to the sauce and toss to coat.
  7. Return chicken to the skillet, nestling it into the pasta and sauce. Cook 2โ€“3 minutes more to heat through.
  8. Sprinkle with chopped parsley and serve warm.
