Ingredients

  • 225g penne pasta
  • 450g lean ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • ยพ cup plain Greek yogurt (or cottage cheese)
  • 1 cup shredded cheddar cheese (or mozzarella)


Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
  3. Add chopped onion and cook for 3โ€“4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  4. Mix in tomato paste and cook for 1 minute to deepen the flavor.
  5. Pour in beef broth and simmer for 3โ€“5 minutes until slightly reduced.
  6. Lower heat and stir in Greek yogurt (or cottage cheese) until creamy and well combined.
  7. Add cooked pasta and shredded cheese. Stir until cheese melts and everything is evenly coated. Serve warm.
