Ingredients
- 225g penne pasta
- 450g lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- ยพ cup plain Greek yogurt (or cottage cheese)
- 1 cup shredded cheddar cheese (or mozzarella)
Instructions
- Cook penne pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
- Add chopped onion and cook for 3โ4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Mix in tomato paste and cook for 1 minute to deepen the flavor.
- Pour in beef broth and simmer for 3โ5 minutes until slightly reduced.
- Lower heat and stir in Greek yogurt (or cottage cheese) until creamy and well combined.
- Add cooked pasta and shredded cheese. Stir until cheese melts and everything is evenly coated. Serve warm.
Notes
- For extra creaminess, blend cottage cheese before adding.
- Add spinach or mushrooms for more vegetables.
