Description

This Creamy Jalapeño Chicken Skillet features tender chicken breasts simmered in a rich, cheesy sauce with a kick of jalapeño. Perfect for a quick, flavorful weeknight dinner with a touch of heat.

Ingredients

  • Boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 small diced onion
  • 3 cloves garlic, minced
  • 12 sliced jalapeños (adjust to taste)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with paprika, salt, and pepper, then cook until golden brown and cooked through, about 5–6 minutes per side. Remove and set aside.
  2. In the same skillet, sauté diced onion and garlic until fragrant and translucent, about 2–3 minutes.
  3. Add sliced jalapeños and cook for 1 minute.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Stir in shredded cheddar cheese until melted and smooth.
  6. Return cooked chicken to the skillet, spooning sauce over the top. Simmer for another 2–3 minutes to heat through.
  7. Garnish with fresh cilantro and serve warm.

Notes

  • Adjust jalapeño quantity for desired heat level.
  • Serve over rice, pasta, or with crusty bread for a complete meal.
  • Leftovers reheat well on the stovetop or in the microwave.
