This Creamy Jalapeño Chicken Skillet features tender chicken breasts simmered in a rich, cheesy sauce with a kick of jalapeño. Perfect for a quick, flavorful weeknight dinner with a touch of heat.
Ingredients
- Boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small diced onion
- 3 cloves garlic, minced
- 1–2 sliced jalapeños (adjust to taste)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with paprika, salt, and pepper, then cook until golden brown and cooked through, about 5–6 minutes per side. Remove and set aside.
- In the same skillet, sauté diced onion and garlic until fragrant and translucent, about 2–3 minutes.
- Add sliced jalapeños and cook for 1 minute.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Stir in shredded cheddar cheese until melted and smooth.
- Return cooked chicken to the skillet, spooning sauce over the top. Simmer for another 2–3 minutes to heat through.
- Garnish with fresh cilantro and serve warm.
