Creamy Rotel Pasta with Ground Beef is the ultimate cozy weeknight dinner. Tender elbow macaroni is tossed with seasoned ground beef, creamy cheese sauce, and zesty Rotel tomatoes for a rich, comforting meal thatโ€™s ready in under 40 minutes.

Ingredients

  • For the Pasta:
  • 8 oz elbow macaroni
  • For the Meat:
  • 1 lb ground beef
  • 2 tbsp olive oil
  • For the Seasoning:
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • For the Sauce:
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 8 oz cream cheese, softened
  • 1 cup beef broth
  • For the Cheese:
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook elbow macaroni according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Season beef with garlic powder, onion powder, salt, and pepper. Stir well.
  4. Add diced tomatoes with green chilies, cream cheese, and beef broth. Stir until cream cheese is fully melted and sauce becomes smooth.
  5. Reduce heat and simmer for 5โ€“7 minutes until slightly thickened.
  6. Add cooked pasta and shredded cheddar cheese. Stir until cheese is melted and pasta is fully coated.
  7. Serve warm and enjoy your cozy dinner.

Notes

  • Swap ground beef with turkey or chicken for a lighter version.
  • Use vegetable broth for a vegetarian-friendly option (with meat substitute).
  • Add red pepper flakes for extra heat.
  • Leftovers store well in the refrigerator for up to 3 days.
