Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup dill pickle juice
  • ยฝ cup all-purpose flour
  • 2 large eggs
  • 1 cup seasoned breadcrumbs
  • ยฝ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying


Instructions

  1. Place chicken breasts in a bowl or zip-top bag and pour in dill pickle juice. Marinate for at least 30 minutes (up to 2 hours).
  2. Remove chicken from marinade and pat dry with paper towels.
  3. Prepare a breading station: flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, onion powder, paprika, salt, and pepper in a third.
  4. Dredge chicken in flour, dip in egg, then coat well with breadcrumb-Parmesan mixture.
  5. Heat oil in a large skillet over medium heat.
  6. Fry chicken 4โ€“5 minutes per side until golden brown and cooked through.
  7. Transfer to a paper towel-lined plate and rest for 2 minutes before serving.
