These Crispy Mashed Potato Cheese Puffs are the ultimate way to use up leftover mashed potatoes. Crispy on the outside, soft and cheesy on the inside, they’re an irresistible appetizer or snack that everyone will love.
Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 cup breadcrumbs
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together mashed potatoes, cheddar cheese, one egg, flour, salt, black pepper, and garlic powder until well combined.
- Shape the mixture into small balls or puffs.
- In a separate bowl, beat the remaining egg. Place breadcrumbs in another bowl.
- Dip each potato puff into the beaten egg, then roll in breadcrumbs to coat evenly.
- Place coated puffs on the prepared baking sheet.
- Bake for 20–25 minutes, turning halfway through, until golden and crispy.
- Serve hot with your favorite dipping sauce.
Notes
- Use cold mashed potatoes for easier shaping.
- For extra crispiness, lightly spray the puffs with cooking oil before baking.
- These can also be fried for a crunchier texture.
