- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 large eggs
- 2 tablespoons Dijon mustard

Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- In another bowl, whisk together eggs, Dijon mustard, and lemon juice.
- Dip each cod fillet into the egg mixture, then coat with the breadcrumb mixture, pressing gently to adhere.
- Place coated fillets on the prepared baking sheet and drizzle lightly with olive oil.
