Ingredients

  • 4 (6-ounce) cod fillets, skinless and boneless
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)
  • Olive oil (for drizzling)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. In another bowl, whisk together eggs, Dijon mustard, and lemon juice.
  4. Dip each cod fillet into the egg mixture, then coat with the breadcrumb mixture, pressing gently to adhere.
