Description

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup bourbon
  • 1 tablespoon ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water (for slurry)
  • 2 green onions, sliced for garnish
  • Cooked rice, for serving


Instructions

  1. Place chicken thighs in the crock pot.
  2. In a bowl, whisk together soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ginger, and red pepper flakes. Pour over chicken.
  3. Cover and cook on LOW for 4โ€“6 hours or HIGH for 2โ€“3 hours until chicken is tender.
  4. Mix cornstarch with water to create a slurry. Stir into crock pot and cook 10โ€“15 minutes more to thicken sauce.
  5. Serve over cooked rice and garnish with sliced green onions.

Notes

  • For deeper flavor, sear chicken briefly before adding to the crock pot.
  • Adjust bourbon to your taste; you can reduce or substitute with apple juice for a milder flavor.
