Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup soy sauce
- 1/2 cup packed brown sugar
- 1/4 cup bourbon
- 1 tablespoon ketchup
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons water (for slurry)
- 2 green onions, sliced for garnish
- Cooked rice, for serving
Instructions
- Place chicken thighs in the crock pot.
- In a bowl, whisk together soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ginger, and red pepper flakes. Pour over chicken.
- Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours until chicken is tender.
- Mix cornstarch with water to create a slurry. Stir into crock pot and cook 10–15 minutes more to thicken sauce.
- Serve over cooked rice and garnish with sliced green onions.
Notes
- For deeper flavor, sear chicken briefly before adding to the crock pot.
- Adjust bourbon to your taste; you can reduce or substitute with apple juice for a milder flavor.
