Description

Crock Pot Bourbon Chicken is a sweet and savory slow-cooked delight with tender chicken thighs in a rich bourbon-soy sauce, perfect for weeknight dinners. Serve it over steamed rice and garnish with fresh green onions for a restaurant-quality meal at home.


Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup bourbon
  • 1 tablespoon ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water (for slurry)
  • 2 green onions, sliced for garnish
  • Cooked rice, for serving


Instructions

  1. Place chicken thighs in the crock pot.
  2. In a bowl, whisk together soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ginger, and red pepper flakes. Pour over chicken.
  3. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours until chicken is tender.
  4. Mix cornstarch with water to create a slurry. Stir into crock pot and cook 10–15 minutes more to thicken sauce.
  5. Serve over cooked rice and garnish with sliced green onions.

Notes

  • For deeper flavor, sear chicken briefly before adding to the crock pot.
  • Adjust bourbon to your taste; you can reduce or substitute with apple juice for a milder flavor.
  • Red pepper flakes are optional, add more if you like it spicy.
