Ingredients
- 1 lb chicken breasts, boneless skinless
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 small onion, diced
- 1 tsp onion powder
- 1 tbsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup chicken broth
- 1 (14.5 oz) can tomatoes with juices
- 8 oz penne pasta
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- Place chicken, bell pepper, onion, garlic, Cajun seasoning, paprika, salt, black pepper, olive oil, chicken broth, and canned tomatoes into the crockpot.
- Cover and cook on low for 4–6 hours, until chicken is tender.
- About 30 minutes before serving, add penne pasta and stir into the sauce. Cover and cook until pasta is tender.
- Stir in heavy cream and Parmesan cheese until creamy and well combined.
- Garnish with fresh parsley and serve hot.

- For extra flavor, sear chicken before adding to the crockpot.
- Adjust Cajun seasoning to your preferred spice level.
