Description

Crock Pot Creamy Cajun Chicken Pasta is a rich, flavorful one-pot meal. Tender chicken, penne pasta, and fresh vegetables are cooked in a creamy Cajun sauce for a comforting dinner full of bold flavors.


Ingredients

  • 1 lb chicken breasts, boneless skinless
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 small onion, diced
  • 1 tsp onion powder
  • 1 tbsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 (14.5 oz) can tomatoes with juices
  • 8 oz penne pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish


Instructions

  1. Place chicken, bell pepper, onion, garlic, Cajun seasoning, paprika, salt, black pepper, olive oil, chicken broth, and canned tomatoes into the crockpot.
  2. Cover and cook on low for 4–6 hours, until chicken is tender.
  3. About 30 minutes before serving, add penne pasta and stir into the sauce. Cover and cook until pasta is tender.
  4. Stir in heavy cream and Parmesan cheese until creamy and well combined.
  5. Garnish with fresh parsley and serve hot.
