Description

This Crockpot Cheese Tortellini and Sausage is a comforting and creamy one-pot meal! Tender sausage, cheese-filled tortellini, fresh spinach, and a rich tomato cream sauce cook together slowly to create a flavorful, hearty dinner.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 (19 oz) package frozen cheese tortellini
  • 4 cups fresh spinach, chopped
  • 1 (28 oz) can diced tomatoes, undrained
  • 1 (8 oz) block cream cheese, cubed
  • 4 cups chicken broth
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste


Instructions

  1. Place Italian sausage in the crockpot and cook on HIGH for 1 hour or until slightly browned, breaking it up with a spoon as it cooks.
  2. Add diced tomatoes, chicken broth, cream cheese, garlic, Italian seasoning, salt, and pepper.
  3. Stir to combine, cover, and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  4. Add frozen tortellini and chopped spinach during the last 30 minutes of cooking. Stir gently to combine.
  5. Once tortellini is tender and spinach is wilted, serve warm and enjoy the creamy, cheesy goodness.

Notes

  • You can substitute fresh pasta tortellini for frozen if preferred.
  • Optional: top with extra Parmesan cheese before serving.
  • Leftovers store well in the refrigerator for up to 3 days and reheat gently on the stove or microwave.
